Chef Javier Tortosa leads our kitchen with a dedication to Mediterranean cuisine, where seasonal and locally-sourced ingredients take the center stage. With extensive experience in countries such as France and Ireland, Javier—born in Villena—returned to his roots to elevate Alicante’s traditional cuisine to new heights.

Word of mouth recommendations have made Fondillón a gastronomic landmark in the city, renowned for the quality of its cuisine and exceptional service.
